Sweet Potato Fries

If you live around Chandler, Arizona, and you haven't been to Joe's Farm Grill yet, shame on you. Even Guy Fieri's been there and he doesn't live anywhere near us. Our family is a big fan of this retro outdoor diner as well as the owner's original restaurant, Joe's Real BBQ. My favorite menu item at the Grill is the sweet potato fries. I'm sure this isn't how they make them at Joe's, but it's a simple way to get a tasty, healthy side dish on the table for dinner. Kids (and adults) love them.

Baked Sweet Potato Fries
2 peeled sweet potatoes, cut into fry shape
olive oil
kosher salt

In mixing bowl, coat potatoes in oil. Spread on foil-lined baking sheet. Sprinkle salt as desired. Bake for 45 minutes at 400.


Raw sweet potatoes are extremely difficult to cut. Be sure you have a sharp, quality knife like the Wusthof Classic Ikon 8" Chef's Knife before you start cutting. You've been warned.
